Procedures to make Chole Masala:
Ingredients:
1. vegetable oil…………………… 2 tablespoons
2. cumin seeds…………………… 1 teaspoon
3. yellow onion…………………… 1
4. fresh ginger ………………… 4 teaspoons
5. garlic cloves…………………… 4
6. chilies………………………………… 2
7. tomatoes…………………………… 6
8. garam masala……………………… 2 teaspoons
9. ground coriander………………… 1 teaspoon
10. kosher salt……………………… 1 teaspoon
11. turmeric………………………… 1/2 teaspoon
12. chickpeas………………………… 2 cans
13. water……………………………… 1/2 cup
14. Pomegranate molasses
15. Plain yogurt
16. Chapattis or steamed white rice
How to prepare:
1. In a large frying pan, add oil and heat on medium heat until it starts shimmering.
2. Start by adding cumin seeds and cook until fragrant for a minute.
3. Add onions, garlic, ginger and chilies to the pan and season with the salt.
4. Cook and stir occasionally for about 6 minutes, until the onions soften.
5. Meanwhile, take a fine mesh strainer and keep it on a bowl and set it aside.
6. Finely chop the tomatoes or mash them. Reserves both pulp and juices.
7. Keep them aside.
8. After onions gets soft, add garam masala, salt, coriander powder turmeric to the pan and coat mix well until the onions are coated with the masala.
9. Cook for another minute until fragrant.
10. Now add chopped tomatoes and chickpeas to the pan. Fry for a minute or two and add water to the pan.
11. Stir to combine everything well and scrape the bottom of the pan to remove the brown bits.
12. Bring the pan to simmer and reduce the heat to low medium and cook for 20 minutes or until it gets thickened to a sauce consistency.
13. Serve the chole masala with pomegranate molasses, steamed rice plain yogurt or chapattis.
