Ingredients:
1. Potatoes…………………………… 1 1/2 pounds
2. Vegetable oil………………………… 1/3 cup
3. Shallot………………………………… 1
4. Curry powder……………………… 1 teaspoon
5. Kosher salt…………………………… 1/2 teaspoon
6. Yogurt…………………………………… to serve
7. Pepper powder……………………… to taste
Method of preparation:
1. Take a large saucepan and add potatoes to it. Cover with water and season heavily with salt. Cover with a tight lid and bring the potatoes to boil on a very high heat.
2. Remove the lid and cook the potatoes until they are soft and falling for 15 minutes.
3. Remove the pan from heat and drain the potatoes.
4. Transfer the potatoes to a baking sheet spread plate.
5. Take a measuring cup and with the bottom of the cup smash the potato until it is flat and ½ inch in thickness. Repeat the process with all the potatoes and keep them aside.
6. Take a large frying pan and fill it with oil for deep frying. Heat the oil for 5 minutes until it shimmers.
7. Meanwhile, take a small plate and add paper towels to it and keep it beside.
8. Take shallots and add them to the pan. Fry them until browned for 5 minutes, do not burn the shallots.
9. Remove the shallots and place on the plate. Add salt and pepper and keep them aside.
Crispy Curried Potatoes10. Take curry powder and add it to the pan. Stir and leave it for 20 seconds.
11. Now take each potato carefully and add them to the pan. Use the spatula to press the potatoes and flatten them.
12. Cook until brown and crispy on one side for 6 to 9 minutes. Flip and cook on other side. . Add salt and pepper to taste.
13. Cook until brown for 4 minutes and add the fried shallots to the potatoes.
14. Toss them and taste. Season with salt and pepper if needed.
15. Take them to a plate and serve them with a scoop of yogurt.
